Pumpkin Breakfast Oat Bars

@mackenziemissil created these yummy breakfast bars that are perfect for a Sunday meal prep.

Ingredients
  • 2 cups Gluten Free Oats
  • 1 teaspoon Baking Soda
  • 2 teaspoons Pumpkin Pie Spice
  • 1/4 teaspoon Salt
  • 2 Eggs
  • 2 teaspoons Vanilla Extract
  • 1 1/4 cup MALK Oat Milk
  • 1/3 cup Maple Syrup
  • 1 cup Pumpkin Purée
  • 1 Bag Dairy-Free Chocolate Chips
The Instructions⁠:⁠
  1. Preheat oven to 375F.
  2. Combine dry ingredients and mix.
  3. Combine wet ingredients with the dry and mix, then add in chocolate chips.
  4. Spray baking pan and line with parchment paper.
  5. Pour mixture into baking pan.
  6. Bake for about 50 minutes at 375F.
  7. Cool for 5-10 minutes before slicing. Enjoy!
