Apple Crumble Muffins

Description

@wholesomelysophia created the perfect fall muffin. Topped with a dreamy crumb topping and cinnamon glaze.

Ingredients
  • 2 Large Eggs, Room Temp
  • 1/2 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1/2 cup Coconut Oil, Melted
  • 2 teaspoons Vanilla Extract
  • 1/2 cup Sour Cream or Greek Yogurt
  • 2/3 cups MALK Almond Milk
  • 1 cup Green Apples, Peeled and Chopped
  • 2 1/4 cups Gluten Free Flour
  • 2 teaspoons Cinnamon
  • 1 teaspoon Apple Pie Spice (optional)
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • Crumb Topping
  • 3 tablespoons Coconut Oil, Melted
  • 1/3 cup Sugar
  • 1/2 teaspoon Cinnamon
  • 1/2 cup Gluten Free Flour
  • 1/4 teaspoon Vanilla Extract
  • Cinnamon Glaze
  • 1/2 cup Powdered Sugar
  • 1/2 teaspoon Cinnamon
  • 1 tablespoon MALK Almond Milk
The Instructions⁠:⁠
  1. Combine eggs, sugar, coconut oil, vanilla, almond milk, greek yogurt in a bowl.
  2. Sift together dry ingredients, then add into wet mixture.
  3. Fold in apples, then pour batter into lined muffin tins.
  4. Combine all crumble ingredients into a bowl, then spoon over each muffin.
  5. Bake muffins @ 350 degrees for 25 minutes, or until a toothpick comes out clean.
  6. Remove from oven & let cool.
  7. Meanwhile, combine all cinnamon glaze ingredients into a bowl.
  8. Drizzle glaze over top of muffins & ENJOY!
