Pumpkin Protein Pancakes

Description

Nothing smells more like a fall Sunday morning than some delicious pumpkin pancakes. By @veggieworldrecipes!

Ingredients
  • 1 cup oat flour
  • 2 tablespoons vegan protein powder
  • 1 tablespoon coconut sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1 dash salt
  • 1/2 cup canned pumpkin
  • 1 cup MALK
  • 2 tablespoons coconut oil
The Instructions⁠:⁠
  1. In a large bowl, mix in all of the ingredients until you get a smooth batter.
  2. Grease a pan with coconut oil and add about ¼ cup of batter for each pancake.
  3. Cook each pancake for 2-3 minutes on medium heat. Flip and cook for about another minute on the other side.
  4. Serve the pumpkin pancakes with some vegan whipped cream, maple syrup, and pecans.
